This temperature chart shows how HotSmarts  reach maximum temperature with a delay of about 5 minutes (in this case); this avoids overcooking or overheating the food. If you preheat a regular cold plate it will get cold in about 5 minutes along with the food.

After reaching maximum temperature, a HotSmart then releases heat slowly to keep food from getting cold.
